1 lb. extra lean ground beef
3/4 cup fresh chopped onion
4 fresh plum tomatoes, chopped
1 pinch salt and pepper
1 cup cooked rice (optional)
2 cups shredded cheese (optional)
4 medium green bell peppers
8 oz. no-salt tomato sauce

Cooking Instructions

In a large skillet, brown ground beef and onion; drain. Add tomatoes, salt and pepper, and cooked rice.
Preheat oven to 325F. Meanwhile, cut top off peppers and remove seeds. Place, cut-side up, in a sprayed 13x9-inch baking dish. Fill with meat mixture. Spoon remaining mixture around peppers. Pour tomato sauce over top.

Add 1/4 cup water to dish. Bake 50 to 60 minutes or until peppers are tender. During last 20 minutes add shredded cheese to top of peppers, if desired.
